Ideas for Preparing Zucchini

Today we are talking about zucchini, a type of summer squash that is also sometimes known as a courgette. Like other summer squash (including pattypans), zucchinis are tender and have edible skin and seeds. Zucchini is a good source of antioxidant vitamins A & C, which can help protect our cells from damage. It also has plenty of potassium, which can help promote heart health and regulate blood pressure.

So, how to prepare zucchini? Personally, one of my favourite methods is simply to saute it with a bit of garlic and oil or butter, or with some sesame oil and soy sauce. It makes a nice summery side dish or a tasty addition to a rice bowl, pasta, or stir-fry. Because of its mild flavour, zucchini is very versatile and you can really get creative with preparing it.
